Mabo Tofu

Tonight’s dinner was another easy one, and it came out of a box. Well, the sauce and flavoring part did anyway.
I’ve seen mabo tofu both ready-made and in these boxes in local Asian markets before, with the latter usually located near the Japanese-style curry. It sounded good, though I wasn’t sure if it would be too spicy for me.
I finally picked up a box with mild sauce this week, bought the tofu and 2 oz of ground chicken meat called for (that was fun to ask for at the meat counter), and got going. Brown the meat, add the sauce, then add the tofu, and you’re done!
I added the green onions just because, and they definitely helped. Otherwise, there wasn’t much texture, and I would have missed having anything vegetable-like besides any tomato in the sauce. The spice level was definitely mild, and I think I could upgrade to medium if I make this again. It was a decent dinner though, especially with all the lovely soft tofu (my favorite kind!).
